Rice and salt are inseparable in this unique marsh landscape in Provence. Long- or round-grain, Camargue rices have been classified “appellation d’origine contrôlée” since 1988. The salt industry dates back many centuries, to the dawn of history.

Very highly prized today, Camargue salt has made a big comeback on the menu.
